They say all roads lead to Rome. But in the case of Bellini, this well-traveled cocktail is an icon of the majestic city of Venice. Invented in the late 1940s by Giuseppe Cipriani, then director of the prestigious Harry’s Bar, it is made with prosecco and peach juice, preferably the white variety. The pink-orange color gives it a glorious sensuality… and perhaps inspired its name, a tribute to the famous Venetian painter Giovanni Bellini, who was especially fond of this shade. Some 70 years later, Bellini is still popular and often revisited with champagne and raspberry puree.
